Dauphinoise.

I had them like that in Sausalito but the'd put layers of stinging nettles in too with a dash of nutmeg, utterly delicious.

As for my favourite, has to be mashed because it is always accompanied by some form of gravy - and my missus makes the best mash on the planet (oddly enough, she can't cook fuck all else, even managed to make lumpy instant gravy once)

Second favourite is sauteed, especially with Pollo Sophia from my favourite italian restaurant near Hampton court.

Yep. As long as they're done properly - shaken up properly after being drained to crisp up the edges, then roasted in duck fat.
